Radishes seem to be an overlooked vegetable. It may be the fact that if not picked and eaten at a particular time in their growth, they can be bitter and/or woody. However at the right stage, they are tasty and have a tender crunch. Tossed with cucumber, sweet onion and a vinaigrette, the simple but colorful combination makes a wonderful chopped salad to complement a grilled entree.In a world that talks too much, writing is a way to capture thoughts and shine a light on the enterprise of life - at home, in the kitchen, out in the garden and almost always through a camera lens.

Radish Cucumber Salad
